Dipotassium Phosphate is the dipotassium salt of phosphoric acid which functions as a stabilizing salt, buffer, and sequestrant. Potassium is mildly alkaline with a pH of 9 and soluble in water with a solubility of 170 gms per 100 ml of water at 25C.

Dipotassium phosphate is an effective buffering agent and sequesterant for a variety of uses functioning as a balancing agent. When used as a food additive or preservative, DKP has highly effective in preventing coagulation. It is used as a buffering agent in the non-dairy creamer market.
